Always Harvested by Hand

Hand weeding, pruning, maintenance and picking are meticulously done by hand with only the ripest cherries being individually selected. Quality controls and standards are built into every process which is the result of extensive research, education and practice so that we may consistently provide a product that not only is incredible the first time but each and every time after that. Highly trained pickers meticulously select only the ripe cherries and must return repeatedly day after day until the particular harvest is completed.

Multiple Processing Methods

Multiple processing techniques and infrastructure allowing us to process our ripe cherries as fully washed, honey or natural and hence opening up a whole new range of flavor profiles and unique beans not available before.

Natural Processed Cherries

Natural processed beans have been dried with the cherry skin and mucilage intact. The result is a fruity and fuller body due to the natural sugars of the cherry skin and fruit.

Honey Processed Cherries

Honey processed beans or semi-washed beans have had the cherry skin removed prior to the drying method but still retain the fruit mucilage to one degree or another. This process results in a flavor profile somewhere in between the natural and fully washed process and hence has a flavor profile in between the the natural and fully washed process. Although there isn't any use of fermentation and hence the resulting beans will not retain hints of the fermentation.

Fully Washed Processed Cherries

Fully washed beans have had the cherry skin and inner fruit mucilage removed through physical agitation and fermentation prior to drying. The result is a clean flavor profile more true to just the bean itself and hints from the fermentation process as well.

Manually Dried

We pride ourselves on having some of the best paid, most trained workers as we believe that a higher paid and better trained worker equals better coffee. Such experience and training are critical when it comes to processed such as the manual drying process, where various methods and instinct are critical in correctly drying based on which of the multiple processes has been used.

Hand Sorting the Dried Beans

Each and every coffee bean has been hand picked when ripe, then sorted based on process, manually dried and finally after all this labor, is once again individually hand sorted to assure no defects end up in the final product. In addition variations such as pea berries and other bean irregularities are also separated out.
